after spending 17 years in new york state and owning a home in the smokies for 20 years I'd say I have a pretty good idea, but agreed, my blood has thinned to the point of being a southerner by the grace of God...

I'm building bagels for the first time. Stuff is mixed and resting. Next I've got to form them and stuff 'em in the fridge overnight. Tomorrow morning I'll be munching homemade bagels. If they don't turn out, the birds out back will get a treat.

Did that. Very sticky dough, threw them in boiling water. I was sure it would turn into a tub of goo, but no! When done they floated to the top just like donuts in a fryer. Plopped them on a cookie sheet and baked. To my astonishment, it worked!

I remember my dough was very sticky, and tossing them in boiling water did not sound like it was going to work, but it did.

Still minor chest pains, not sure why yet. I go back to the heart doctor Wed. Now I got to go see a lung doctor but don't know when yet. My grandmother had angina, it would make her feel like she was having a heart attack.
