I generally fry them up and eat them with hot sauce and ketchup mixed together. Gizzards are my favorite. The liver is ok, too soft for my tongue but they taste good.
Heart is firm. I like to fry slices of deer heart up too.
I like fried gizzards and hearts too. I like the livers in a pate with saltine crackers.
 
Reminds me o the time I went shooting with my buddy Fat Bob. He wanted to take his sister along to teach her how to shoot. She's waving this loaded Sig around with a round in the chamber and her finger on the trigger, painting the both of us. He's screaming at her to mind where she's pointing it, and I'm diving behind him hoping the accidental discharge will hit bone and not go through.
