Joe or anybody else that makes Italian meatballs; Have you ever used blue cheese in 'em?
Its a aggressive flavor and cant see any harm.
I may consider the amount so they dont over power said meat balls
You want to taste the onions and garlic especially if you cook up the onions first IMHO

Yes I have extra blue cheese burgers in the freezer made with too much blue cheese. Don’t wanna use too much
 
I used 5oz. in a pound of Italian sausage and a pound of ground round. Chucked some other crap in there, too. Turned out pretty good. Used 'em to top off my lasugna which is baking as I type.
Got enough cheese of various kinds on it to block every artery in a moose.
