Carrie's Cannabis Cheese Crackers

1. Cheddar-Cornmeal Icebox Crackers
2. Parmesan-Rosemary Icebox Crackers
3. Gruyere-Thyme Icebox Crackers

1.Cheddar-Cornmeal Icebox Crackers

1 cup all purpose flour
2 tbsp yellow cornmeal
1 1/4 tsp salt
1/4 tsp cayenne pepper
pinch of nutmeg
2 tbsp very cold Cannabis butter, cut into small piece's
1 cup finely grated Cheddar cheese (I'm Canadian use the good cheese!)
1/4 cup milk
1.Combine the flour,cornmeal,salt,cayenne,and nutmeg in the bowl of a food processor. Pulse to combine. Add the butter and pulse until the mixture resembles coarse meal. Add cheese and pulse until combined. With the machine running, add the milk. Process until the dough comes together and is well combined.
2.Transfer the dough to a clean work surface. Shape the dough into 2 inch wide log. Wrap and refrigerate for at least 24 hours.
3.Heat oven to 325 F. Slice the well chilled log into 1/4 inch thick slices. Transfer the slices to a baking sheet and bake immediately, about 25 to 35 minutes. Cool

2.Parmesan-Rosemary Icebox Crackers

3/4 cup all purpose flour
1 tsp salt
pinch white pepper
2 tsp finely chopped fresh rosemary
3 tbsp very cold Cannabis butter ( cut into small pieces)
1 cup finely grated Parmesan cheese
5 tbsp sour cream
1.Combine the flour,salt,pepper and chopped rosemary in bowl of food processor. Pulse until combined. Add 1 tbsp of sour cream at a time,pulsing each time to combine. Process until the dough comes together and is well combined.
2.Transfer the dough to a clean work surface. Shape dough into a 2 inch wide log. Wrap and refrigerate for at least 24 hours
3.Heat oven to 325 F. Slice the well chilled long into 1/4 inch thick slices. Transfer to baking sheet, bake for 25-35 minutes, cool.

3. Gruyere- Thyme Icebox Crackers

1 cup all purpose flour
1 tsp salt
1/8 tsp pepper
1 1/2 tbsp chopped fresh thyme
3 tbsp very cold Cannabis butter(cut into small piece's)
1 cup finely grated gruyere
1/4 cup milk
1. Combine the flour,salt,pepper,and chopped thyme in the bowl of a food processor. Pulse to combine. Add the butter and pulse until the mixture resembles coarse meal. Add the cheese and pulse until combined.
2. Transfer the dough to clean work surface. Shape the dough into a 2 inch wide log. Wrap, refrgerate for at least 24 hours.
3. Heat oven to 325 F. Slice the well chilled log into 1/4 inch thick slices. Transfer to baking sheet, bake for 30-35 minutes, cool.
